Diabetic Peanut Butter Cookies
Diabetic Peanut Butter Cookies are a great choice for people with high blood sugar levels because they are low in carbohydrates, fat, and sugar content. But we don’t need to be diabetic to enjoy these cookies!

They are delicious and nutritious. They are also gluten-free, dairy-free and vegan. Diabetic peanut butter cookies are a great way to include healthy fats into your diet while still enjoying some of the things you love. These cookies have no added sugar, no grains and they are also vegan!

Diabetes is a chronic condition that affects the way the body uses sugar and insulin. There are three types of diabetes: type 1, type 2, and gestational diabetes. Type 1 diabetes is an autoimmune disease where the body doesn’t produce insulin.

Type 2 diabetes is when the body doesn’t produce enough insulin or when cells don’t react to insulin properly. Gestational diabetes occurs in pregnant women who have never had diabetes before but their pregnancy hormones stimulate their pancreas to make extra insulin.

Here are three Recipes for Diabetic Peanut Butter Cookies

These cookies are very soft and chewy, with a rich peanut butter taste. They are also gluten-free, dairy-free, and vegan (no butter).

Ingredients:

  • 1/2 cup organic peanut butter
  • 1/2 cup organic coconut sugar
  • 1/4 cup organic brown rice syrup
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 3 cups gluten-free oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Diabetic Peanut Butter Cookies

  • 1 c. flour
  • 1/2 c. creamy peanut butter
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 c. water
  • 1 tbsp. liquid sweetener
  • 1/2 c. salad oil

Mix all together in a large bowl.  Shape into balls and place on an ungreased cookie sheet.
Bake at 375 degrees for 12 to 15 minutes.   (You may add a little more flour if desired.)

Diabetic Peanut Butter Cookies Recipe

  • 1/3 c. plain flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • Pinch of salt
  • 2 tbsp. shortening
  • 2 tbsp. peanut butter
  • 1 tsp. Sweet ‘n Low
  • 1 egg, beaten

Mix and stir all ingredients in order (flour, baking soda, baking powder,  salt, shortening, peanut butter and Sweet ‘n Low).

Add beaten egg and mix well.

Drop by large teaspoon on greased cookie sheet.

Bake at 350 degrees for 10 minutes.
